Breakfast for dinner

Quite frequently I am asked “What do you cook for dinner at home?” Sometimes it’s gourmet, sometimes it’s just something quick, and sometimes it’s comfort food, especially at this time of the year. Tonight, I made one of my all-time favorite comfort food dinners — breakfast! with a bit of a twist. Eggs, bacon, and skinny sweet potato hash browns. YUM!

These are so easy to make. Peel and cut a large sweet potato into 1/4-inch dice. Toss with olive oil (just a bit, salt (I use Chardonnay smoked salt) and plenty of freshly ground black pepper. Spread on a sheet pan lined with parchment, roast at 425°F until the potatoes are browned and soft, about 15 minutes. That’s just enough time to get the other dishes ready. when the potatoes come out of the oven, sprinkle them with a bit of balsamic vinegar, and Oh WOW! They’ so good, and healthy for you too! Next time, you’ll want to make more. . . .
