Corn is at the farmers market!! And fresh corn pudding is about as good as it gets, Tomorrow I will post another of my favorite recipes for corn, but for today:

Corn Pudding

2cups fresh corn kernels

1 small red bell pepper finely chopped

1 small onion finely chopped

1/3 cup EACH grated Swiss cheese & Parmesan

2 tablespoons flour

1 ½ teaspoon dry mustard

½ teaspoon salt

2 eggs

1 12-ounce can of evaporated milk

Butter (optional)

Preheat oven to 350 °F, and spray non stick cooking spray onto a 1 ½ -2 quart baking dish. In a medium bowl, toss together corn, onion, peppers, cheeses, flour, dry mustard and salt. In another bowl wisk together the evaporated milk and eggs. Stir egg mixture into the corn mixture. Dot with butter if desired. Pour into prepared dish and bake until set, about 45 minutes.
