cranberry relish

2 cups fresh cranberries, divided
1/2 cup sugar
1/2 red onion, finely diced
2 oranges, cut into supremes
3 stalks celery, diced
1 teaspoon grated fresh ginger
2 teaspoons fresh lime juice
1 jalapeno pepper, finely diced
salt to taste
2-4 tablespoons orange juice

In a medium saucepan, combine 1-3/4 cups cranberries with sugar; heat just until berries pop. Add reserved cranberries; chop in food processor to desired consistency. IN a large mixing bowl, combine with remaining ingredients; moisten with orange juice. Refrigerate until ready to serve.
