lemon curd

  • Finely grated zest and juice of 1 lemonLemon Zesting
  • 1⁄2 cup sugar
  • 1 egg, beaten then strained
  • 2 tablespoons butter, cut into small cubes

Place all the ingredients in a large heatproof bowl and mix well. Cook in the microwave on high power for 1 minute. Stir well and cook for a further minute. Repeat until the mixture just begins to boil. This takes 1 to 3 minutes, depending on the temperature of your ingredients and the wattage of your microwave. When the mixture begins to bubble, it is done. Stir immediately and pour into jars. Let cool, seal tightly, then refrigerate to store.

The curd will store about 3 weeks.

Makes about 1 cup.

Lime curd: Replace lemon juice with juice of one half lemon, and juice of one half lime. Replace lemon zest with zest of one lime.

Orange curd: Replace lemon juice with juice of one half lemon, and juice of one half orange. Replace lemon zest with zest of one orange.

Raspberry curd: Replace lemon juice with juice of one half lemon, and 1-1⁄2 tablespoons raspberry puree.
