what to serve with a bit of bubbly?

A flute of bubbly, sparkling wine is just the ticket this season, of course, paired with a savory appetizer that is quick and light, flavorful and impressive! I like to serve these mini soufflés with Treveri Extra Brut.

mini goat cheese soufflés

  • goat_cheese_souffle1 egg
  • ¼ cup milk
  • 4 ounces goat cheese, crumbled
  • 1 ounce Parmesan, finely grated.
  • dash cayenne pepper
  • 2 tablespoons flour
  • freshly ground black pepper
  • strawberry jam, for garnish

Preheat oven to 425°F. Spray a 12-count mini muffin time well with non-stick spray, or brush with melted butter. 

Combine all ingredients except jam in blender, process until smooth. Pour soufflé mixture into cups to about 2/3 full. Sprinkle with pepper. Bake 11-12 minutes, until golden and puffed. Remove from pans, garnish with strawberry jam.

Makes 12 mini soufflés.
