Brining is a technique that enables a chef to add moisture and flavor to meats. If you’ve ever had a truly moist port chop or chicken breast, it most likely has been brined. It’s easy to do. Brining works because it first draws the moisture out of the food, then the moisture in the surrounding liquid flows back in, carrying with it all of the flavors in the brine.
