I am a HUGE SEAHAWKS FAN! I love to watch the games, from the comfort of my own recliner. Snacks are always on the menu, and a Mexican food is always a huge hit here. When I lived in San Diego, I discovered this dip at my favorite Mexican restaurant, Miguel’s Cocina. This is theirs, ENJOY!!!
white jalapeño dip1 cup whipping cream 1/2 cup sour cream 1/2 teaspoon chicken base 1 tablespoon juice from bottled jalapenos 1 tablespoon butter 1/2 tablespoon flour 1 jalapeno, minced 2 ounces shredded cheese, cheddar and jack
Heat whipping cream in heavy saucepan over high heat. When the cream is ready to boil, stir in sour cream. After sour cream dissolves, reduce heat to medium. Stir in chicken base and jalapeno juice, simmer.
While cream is heating, make a roux by melting the butter in a saucepan over medium heat. Stir in flour, mix with whisk. Cook until flour turns pale gold. Add hot cream mixture to roux, whisking constantly until well incorporated.
Remove from heat, stir in jalapeno and cheese. Makes about 2 cups.
